Distiller Diplomatico (La Miel, Venezuela)

I bought this rum because it consistently came up as one of the best widely available rums you could buy, and it's not that expensive. In Ontario, it used to be harder to find, but recently it has been more commonly available.

This rum is made from just the pot still distillates produced at diplomatico, which are used to craft what they deem their best rums. Rather than some of their other rums which are made from both light molasses ("sugar cane honey") and dark molasses, this is just made from light molasses. At Diplomatico, they also ferment this "honey" for twice as long as the regular molasses, allowing it to develop more complex flavor. Thus, this bottling is really a selection of their best spirit. Also, it is a terrific bottle.

Elegant, sweet, bright,  and candied. What a terrific nose! Candied, dried blueberry, toffee, vanilla, caramel, rich rum cake, pink peppercorn, and oaky spices – cinnamon, clove, nutmeg. Walnut skins and light sherry as well. Very nicely balanced. The palate is also great – though sweet – with a very clean molasses note, some rancio, orange, clove, and menthol. The finish is bright, with light berries, rancio, currants, vanilla, and light brown sugar. Terrific rum!
